    1/3 cup sugar
    Toasted
    3 tablespoons apple cider vinegar
    2 1/4 teaspoons onion juice (look for small bottles of onion juice in the spice section of the grocery store. If it's not available, grate a piece of onion and squeeze the pulp through cheesecloth or a fine-mesh strainer)

    1 teaspoon soy sauce
    1/2 teaspoon dry mustard
    1/2 cup vegetable oil
    1 tablespoon sesame seeds, toasted
    Salt

    To prepare the dressing: Combine the sugar, vinegar, onion juice, soy sauce and mustard in a blender or food processor and blend well. With the motor running slowly, add the oil in a slow, steady stream to make an emulsion. Stir in the sesame seeds and salt to taste.

    You can make this the day before you need it and store it in the refrigerator. Use within a week or so. Great over spinach with strawberries or mandarin oranges and sliced almonds.
